I'm not a football fan really. But my son played football this year for the first time and now he loves football. He is sitting here on the couch screaming at the T.V. He wants the Giants to win I say the other team will win.

Food oh I Love Food
Yesterday (Feb 1) I made something New. I love to cook for my family and they love it when i fix something new. Its called Starry Night Taco cups
I didn't have a star cookie cutter so i used what i had (circle). And if you had just taco seasoning that would also work. I had fun i see different ways i can serve this. And when i cut out the tortillas in 4 inch square i used a pair of scissors that are meant for scrapping with.
Cinnamon apple tartlets
Ingredients
I have cooked a few new things out of my new cookbooks that i got from the kids school book fair. We are trying a new way on enchiladas tonight. They are made with cream cheese. One of my husband favorite things.
Ingredients
- 1 pound ground beef
- 1/2 cup chopped onion
- 1/4 cup salsa
- 1/4 cup ketchup
- 1 tablespoon chili powder
- 1 teaspoon salt
- 16 flour tortillas (7 inches)
- Shredded lettuce, chopped tomatoes, shredded cheddar cheese and/or sour cream
Directions
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the salsa, ketchup, chili powder and salt; heat through.
- Cut each tortilla into a 4-in. square; set scraps aside. Microwave eight squares at a time for 20 seconds. Press onto the bottom and up the sides of greased muffin cups; set aside.
- Cut tortilla scraps into stars with a 1-in. cookie cutter; place on greased baking sheet. Bake at 350° for 6 minutes or until golden brown; set aside.
- Fill each tortilla cup with 2 tablespoons meat mixture. Bake for 12-15 minutes or until tortillas are golden brown. Serve with toppings of your choice; garnish with toasted stars. Yield: 16 servings.

- 1 tube (8 ounces) refrigerated crescent rolls
- 4-1/2 teaspoons cinnamon-sugar, divided
- 1 large tart apple, thinly sliced
Directions
- Separate crescent dough into four rectangles; place on an ungreased baking sheet. Seal perforations. Sprinkle with 3 teaspoons cinnamon-sugar.
- Bake at 375° for 5 minutes. Arrange apple slices over dough; sprinkle with remaining cinnamon-sugar. Bake 5-8 minutes longer or until golden brown. Serve warm. Yield: 4 servings

A Winding Road
I have not blogged for some time. It has been a busy life. Well the road had many turns. We have are way now and we are going to work on that to get were we want and were God leads us. Here are some highlight on what has been happening. We got a foreign exchange student from Hong Kong we had her 13 days there was a bearer. So she went back home so we decided to do it again.
We got a 15 year old girl from Germany (Eva). We had her 3 mouths and it was a blast. She is our daughter no matter what has happened. She will be part of our lives forever.
Things happened and she had to leave our home. CPS came into our lives. Well that i don't want to go into much detail but the case was closed and no chargers. Now we are moving on. We have some door opening and I can see the light. We are hoping to get started on our paper work so we can soon have a daughter in our home. I have been directed this way for some time it just get steered a different way.
